Peanut Butter Cup Brownie Cupcakes

Well, another excuse to bake. Will's (my brother) birthday is March 4, and we are celebrating it this weekend. He asked my mom to make homemade vanilla ice cream, and these will be the perfect addition!



Ingredients:
1 box (19.5 ounces) fudge brownie mix
1/2 cup vegetable oil
1/4 cup water
2 eggs
12 miniature peanut butter cups

Directions:
Preheat oven to 350.
Line muffin tin with 12 paper baking cups.
Mix the brownie mix, vegetable oil, water, and eggs together until smooth. Pour batter 2/3 full in the cupcake liners. Place the peanut butter cups in the center of the cups and press down until the top of the candy is level with the batter. Bake for 25-35 minutes until batter is set (be careful not to over bake). Take cupcakes out of tin and cool on a cookie rack for at least 10 minutes.
