Blackened Grilled Red Snapper

Blackened fish is typically cooked on a skillet, but Aubrey changed it up a bit. We used a seasoning that's made in Selma, Alabama called Southern Flavor. It's the one with the green label used for wild game, but it can also be used to blacken fish. I have to say that this red snapper was so good.


Ingredients:
4 red snapper fillets
2-3 ounces fresh squeezed lemon juice
4-6 ounces olive oil
Salt & Pepper, to taste
Seasoning powder, to taste (we used Southern Flavor)
Cooking spray

Directions:
Prepare grill. Season the fish with salt and pepper. Marinate fish in lemon juice and olive oil for 30 minutes in a baking dish covered with saran wrap or a large zip lock bag in the fridge. Spray fish baskets with cooking spray, and place the fish inside. Sprinkle with seasoning powder and place on the grill. I think Aubrey grilled them for about 5-10 minutes on each side. Just make sure the fish are flaky when pulled apart.

I cooked fish (grouper) last night and it was really good, too....Even Catherine wrote and texted me that it was good! She had it as a leftover!
