Molasses Cookies

When I saw these cookies on Sammyw's blog, I knew I had to bake them... the biggest reason is that I needed to get rid of the molasses that I bought for a previous recipe. Let me tell you that these are SO GOOD. They taste like iced gingerbread cookies.... ones you DON'T have to roll out, and they are so soft. I do need to warn you that they are very addicting. I made them for a gift, and I had to pack them up in the cookie box before I ate them all. This recipe made about 5 dozen cookies.

Ingredients:
1 and 1/8 cup oil
3/8 cup molasses
2 eggs
1 and 1/2 cup brown sugar
3/4 tsp ground cloves
3/4 tsp ground ginger
1 1/2 tsp cinnamon
3/4 tsp salt
3 tsp baking soda
3 cups unbleached all purpose flour (I used bleached b/c that's what I had).


Directions:
Preheat oven to 375.
Mix the oil, molasses, eggs and brown sugar together until well combined. Mix dry ingredients into wet ingredients. Spoon batter onto a greased baking sheet (it helps to have a cookie scoop). Bake for 5-8 minutes (it took mine 9-10 minutes. Cool on a rack.
Make frosting by combining powdered sugar with a little water until desired consistency. Frost cookies with the back of a spoon or drizzle icing on top of cookies.

Wow I love molasses cookies and can't believe I have never thought to ice them! I am definitely trying that next time!

I've never had any molasses cookies, but the spices in these make them sound wonderful! They're pretty, too!
