Chicken Tequila Burgers

I love experimenting with different types of burgers.... beef, turkey, chicken, and whatever else I may try in the future. This burger didn't let me down. The lime zest really heightens all of the flavors, and I topped it with a spoonful of pico de gallo to give it a little "juice."
I think next time I'll give these to Aubrey to throw on the grill. I think a little flavor from the charcoal grill will be a nice touch.



Ingredients:
2 cloves garlic, chopped
1 jalapeno pepper, seeded and chopped
2 chicken breasts (about 1 pound total)
3-4 Tablespoons cilantro
Zest of 1/2 of a lime
1 ounce tequila
Dash of soy sauce
Salt and pepper, to taste
1/2 cup panko bread crumbs
Hamburger buns

Directions:
Preheat broiler.

Line a baking sheet with foil and brush lightly with olive oil. Combine the garlic, jalapeno, chicken breasts, cilantro and lime zest in the bowl of a food processor. Pulse several times until the chicken is uniformly ground. Mix in the tequila, soy sauce, salt and pepper to taste, and panko. Pulse a few more times until the ingredients are well blended.

Form the mixture into 4-5 patties and place them on the prepared baking sheet. Broil the burgers for about 12-15 minutes, flipping halfway through cooking to brown both sides. Check for doneness before serving. Serve on buns with desired toppings.

I guess that I'm just used to seeing burgers be brown, but the flavors in this do sound wonderful!
Jamie had a wreck late this afternoon....air bags went off and radiator is busted. Riley wasn't in the car, thank heavens! Illu mucho.

As I mentioned, these are great. I made them right after I saw them in Cara's blog but haven't had a chance to get them up in mine.

I had made something similar before with ground turkey and salsa so I thought this would be good too. Only, Walmart didn't have the ground chicken so I used turkey, and then I didn't have some of the other ingredients so I made a lot of substitutions but it was still great! Hopefully I'll be able to get the ground chicken to try it the right way soon
