Honey Glazed Carrots

My mother-in-law bought a new cookbook, and I found so many recipes that I want to make. Many of them are recipes that have eggnog as a main ingredient, so I'll try those during Christmas. There are other recipes, such as this one, that use readily available ingredients.
Aubrey and I love cooked carrots. The honey and citrus flavors pair well together, and the carrots are perfectly tender. This will definitely be a go-to side dish for us.


Ingredients:
1 1/2 quarts water
1 pound pack of whole carrots, diagonally sliced about 1/2 to 3/4-inch thick
2 Tablespoons butter
2 Tablespoons honey
1/2 teaspoon grated fresh orange rind
1/2 teaspoon salt
1/4 teaspoon pepper
1 Tablespoon fresh parsley, chopped
Orange rind curls for garnish (optional)

Directions:
Boil water in a pot over medium heat. Add carrots and cook 10 minutes or until tender. Drain well. Return carrots to pot, add butter and next 4 ingredients. Cook, stirring occasionally, 3-5 minutes or until glazed. Stir in parsley. Garnish, if desired and serve immediately.
Makes 4-6 servings

Made these last night. They were delicious! A great way to get my kids to eat carrots :)

I love carrots and so does Sugar. I'll have to make these for them at some point. Nutritious and they look good! Illu!
