Chicken Fried Steak

I found this light recipe from recipezaar. Since my last chicken fried steak went well, I wanted to try another similar recipe. I think I like this one a little better, but they are both really good. This is one of those meals that brings me back to childhood. I remember this being my absolute favorite meal that was served from the Pickens Academy lunchroom when I was in elementary school. It's funny the things that we remember and how different tastes and smells can bring us back to a certain time in our lives. I also remember that an ice cream cost a quarter, nickel and a dime (40-cents).

Ingredients:
4 lean cube steaks
1/2 cup fat-free buttermilk
1 cup flour (reserve 1 Tablespoon)
1 teaspoon salt
1 teaspoon steak seasoning
2 tablespoons oil
2 cups skim milk
Salt & Pepper, to taste

Directions:
Dip steaks in buttermilk. Combine flour, salt, and steak seasoning (remember to keep 1 tablespoon set aside). Dip steaks in flour mixture.
Set steaks on wax paper, let set for 20 minutes.
Heat 1 tablespoon oil in skillet, add steaks, cook until both sides are golden brown. Remove from pan and keep warm.
Combine milk and reserved TBSP of flour in bowl until well mixed.
Stirring constantly, add milk mixture to skillet. Sprinkle with salt and pepper. Once added, bring mixture to a boil.
Lower heat and simmer until gravy thickens.
Serve over steaks.

Yum! I've always called this country fried steak. Hannah made the best, and I used to request this for my birthday meal b/c it was so good. I didn't remember that PA served this! Maybe Catherine was right about my memory! :-(
This recipe doesn't sound as fattening with the loand no fat milks.
