Citrus-Cumin Black Beans

This is my favorite recipe to cook when the hubs isn't eating in. He was scoping out some land today and wouldn't be back till after supper. This is actually a really good meal to me when it's placed on a fluffy bed of rice. The beans also make a good side item for quesadillas, tacos, or any other Mexican food.


Ingredients:
1 (15 ounce) can black beans, drained, rinsed
1/2 teaspoon ground cumin
1 Tablespoon lime juice
1/2 cup green onions, chopped

Directions:
In a saucepan over low heat, combine beans, cumin and lime juice. Heat through, about 3-4 minutes. When ready to serve, garnish each serving with chopped green onions.
