Sweet Blueberry Muffins

I also got this recipe from the Christmas Gifts of Good Taste cookbook. These muffins are so good.... Not too sweet, but sweet enough. I used fresh blueberries, and they just melted in my mouth.


Ingredients:
3 cups all-purpose flour
1 cup sugar
4 tsp baking powder
1 tsp salt
1 and 1/4 cups milk
3/4 cups vegetable oil
2 eggs
1 pint fresh or frozen blueberries
1 and 1/2 TBSP sugar

Directions:
Preheat oven to 425. Grease and flour muffin pans or line with paper liners. In a large bowl, combine flour, sugar, baking powder, and salt, and make a well in center of mixture. Combine milk, oil, and egg; add to dry ingredients, stirring just until dry ingredients are moistened. Batter will be thick. Fold in blueberries. Fill greased muffin cups about 3/4 full. Sprinkle 1 and 1/2 TBSP sugar over batter in muffin cups. Bake 20 minutes or until a toothpick inserted in center of muffin comes out clean. Transfer muffins to a wire rack to cool.
Yield: 24 muffins. To reheat muffins, bake at 350 for about 5 min.
