School of Fish Cupcakes

We're going to the beach this weekend, and I thought I'd make these cupcakes for the occasion. These are from the "Hello, Cupcake" book. To make things quicker, I used boxed cake mix with jar frosting. Aubrey tasted one and said I had spoiled him with the homemade buttercream icing. He still managed to eat another one, though.



The original recipe says to put a chocolate covered marshmallow on top of the cupcake and icing on top. I think the point is to give it a higher rise. Needless to say, my flat cupcakes don't have a chocolate covered marshmallow underneath the icing.


So, basically you just make cupcakes either from a box or homemade. Then you make your icing or use store bought and tint it blue with food coloring. I used the food coloring paste because I didn't want the liquid to water down the icing.
Stick some sweedish fish on top, and you have a school of fish.
