White Cheese Mexican Dip

I made this dip to snack on, and it was delicious. The recipe comes from a Vera Bradley cookbook (recipe from Vera's granddaughter, Amy Byrne Ray), and she says that every time she makes this someone always asks for the recipe. I couldn't stop snacking on these because I thought it was so good. Aubrey didn't want to try it because it has cottage cheese in it.... but I loved it. I put extra green onions in it because I love the taste.

Ingredients:
2 cups sour cream
16 ounces cottage cheese
8 ounces grated pepper-jack cheese
1 bunch green onions, sliced
1/2 jalapeno chile, minced, or Tabasco sauce, to taste (I used the jalapeno)

Directions:
Combine the sour cream, cottage cheese, pepper-jack cheese, and green onions and mix well. Add the jalapeno chile and mix well. Serve with tortilla corn chips.

I'm kindda like Aubrey in that I probably wouldn't have made this with the cottage cheese in it, even though I love cottage cheese (with fruit or tomatoes!). If you say it's good, I'll trust you! I may even try it! :-)
