Goat Cheese Toasts

I saw a recipe for Roasted Butternut Soup with Goat Cheese Toasts, and I was so excited to make it. Well, the soup was nothing to write home about. I'm not even going to waste my time blogging it, but these little toasts sure are worth blogging about. I love goat cheese. I fell in love several years ago when I was traveling to a pharmacy rotation in Montana. I traveled there with a couple of friends, and we stopped at every tourist attraction we could find along our drive from Alabama to Montana. One of the places we visited was Vail, CO. The day we were there, they were having a cheese fair. Several dairy (goat cheese, in particular) farmers were there to sell their different cheeses. We tried every kind of goat cheese you could think of.... and that's where I fell in love with it. In Vail, CO. Mmmm. I love you, goat cheese!


The crunchiness of the toast and the creaminess of the cheese was the perfect combination. The chives sprinkled on top was like a cherry on top of an ice cream sundae.

Ingredients:
6 (1-ounce) slices French bread baguette
1/2 cup (2 ounces) goat cheese, crumbled
1 Tablespoon finely chopped fresh chives

Directions:
Place bread slices in a single layer on a baking sheet. Broil 2 minutes or until toasted. Sprinkle about 4 teaspoons cheese on each slice; sprinkle evenly with chives.

I have never thought on using goat cheese on top of toasts, what a good idea!

That sounds very yummy and so simple! I just want to take my pepper grinder and add pepper and then munch away.
